Traditional Baked Potato Pancakes
Ingredients for 1 Portion
|whole wheat flour
|salt and pepper
|Greek yogurt, plain, fat-free
Preheat oven to 375°F. Spray baking sheet with cooking spray. Grate potato and onion. Squeeze water from potato mix. I like to use my hand and squeeze out water over the sink. Mix with flour, egg substitute and season with salt and pepper. Form into small patties and place on baking sheet. Drizzle with olive oil. Bake for 20-25 minutes until pancakes are crisp. Top with Greek yogurt and serve with unsweetened applesauce.
