Traditional Baked Potato Pancakes

Ingredients (for 1 person):

1 potato
1/3 yellow onion
1 Tablespoon whole wheat flour
2 Tablespoons egg substitute
1 dash salt and pepper to taste
1 Tablespoon olive oil
1/3 cup applesauce
2 Tablespoons Greek yogurt

 

Preparation:

Preheat oven to 375°F.
Spray baking sheet with cooking spray.
Grate potato and onion.
Squeeze water from potato mix. I like to use my hand and squeeze out water over the sink.
Mix with flour, egg substitute and season with salt and pepper.
Form into small patties and place on baking sheet. Drizzle with olive oil.
Bake for 20-25 minutes until pancakes are crisp.
Top with Greek yogurt and serve with unsweetened applesauce.
