Ingredients (for 1 person):
1/3 yellow onion
1 Tablespoon whole wheat flour
2 Tablespoons egg substitute
1 dash salt and pepper to taste
1 Tablespoon olive oil
1/3 cup applesauce
2 Tablespoons Greek yogurt
Preheat oven to 375 degrees F.
Spray baking sheet with cooking spray.
Grate potato and onion.
Squeeze water from potato mix. I like to use my hand and squeeze out water over the sink.
Mix with flour, egg substitute, and season with salt and pepper.
Form into small patties and place on a baking sheet. Drizzle with olive oil.
Bake for 20-25 minutes until pancakes are crisp.
Top with Greek yogurt and serve with unsweetened applesauce.
