Beet and Goat Cheese Citrus Salad

Ingredients (for 1 person)

1/2 (Each) orange
1/4 cup beets
3 cups mixed greens
1 ounces goat cheese
1 Tablespoon walnuts, chopped
2 Tablespoons Italian dressing, reduced fat
2 Tablespoons balsamic vinegar
1 Tablespoon herbs, fresh


Peel and slice orange.
Cube beets.
Toss with mixed greens. Sprinkle with cheese and walnuts.
Mix dressing, vinegar, and herbs in a bowl. Pour over salad and toss gently.
