Ingredients (for 1 person):
? teaspoon brown sugar, packed??
1 teaspoon pecans, chopped??
1 teaspoon raisins
1 teaspoon low-fat buttery spread
2 Tablespoons raspberries, fresh
? cup vanilla ice cream, light
Make sure to use firm apples for this recipe such as: Fuji, Granny Smith, Cortland or Jonathan apples.
Core the apples, leaving the bottom intact.
Place in microwavable baking dish.
Mix the cinnamon, brown sugar, pecans and raisins. Pour into apple.
Top with buttery spread.
Microwave on HIGH for about 2 min or until apple is soft.
Be careful to not to microwave too long or apple will not hold its shape.
Let stand for 1-2 min.
Place in small bowl and top with ice cream.
