Ingredients (for 1 person):
2 slices whole wheat bread
2 Tablespoons onion
2 Tablespoons celery
1/4 cup fresh mushrooms
1 teaspoon trans-fat free spread
1/8 cup egg substitute
dash salt and pepper to taste
1 teaspoon sage
1/8 cup chicken or vegetable broth
Preheat oven to 375°F.
Toast bread or use bread that is stale. Cut into cubes; set aside
Chop all vegetables.
Heat spread in a skillet. Add vegetables and saute until softened.
In a bowl, combine bread cubes, vegetable, egg substitute and seasoning. Combine well. Add broth slowly, just until mixture is moist.
Coat a small ramekin or baking dish with cooking spray. Pack in stuffing.
Place in oven and bake for approximately 20 min or until set.
