Ingredients (for 1 person)
? cup white rice, cooked
3? ounces white fish of your choice, raw
1 dash of salt and pepper
? teaspoon garlic powder
6 cherry tomatoes
? (Each) summer squash
? cup zucchini
? (Each) onions, raw
1 teaspoon olive oil, extra virgin
1 fluid ounce white wine
1 Tablespoon lemon juice
Prepare rice per package directions.
Preheat oven to 375?.
Cut a large square of aluminum foil.
Place fish on aluminum foil and season with salt, pepper and garlic powder.
Cut tomatoes in half. Thinly slice squash, zucchini and onion.
Top fish with vegetables.
Drizzle with olive oil, wine and lemon juice. Close up packet. Place in oven and bake for about 20 minutes or until fish flakes.
Serve fish and vegetables over cooked rice.
