Ingredients (for 1 person)
1 Tablespoon low-fat buttery spread (Smart Balance)
2 Tablespoons onion, chopped
? cup broccoli
? cup mushrooms
? cup egg substitute
1 dash of salt and pepper
? teaspoon herbs, fresh
1 slice pumpernickel bread
3 fluid ounces orange juice
Heat a small amount of the buttery spread in a non-stick skillet. Add vegetables and cook until crisp tender. Pour egg substitute into pan. Stir gently. Season with salt, pepper and fresh herbs of your choice. Cook until set.
Release onto plate and fold in half.
Toast bread. Spread with remainder of buttery spread.
Enjoy with orange juice.
